So I shop in Banda Aceh online, and what do I find on Main Street? Oops, nope! No handouts from the American government, just the damn George Foreman grill! Is there any place I cannot find that thing? I went to Vernon, to my dad’s, sitting right there on the deck, the George Foreman Grill! Yeah; like I was surprised.

Ratites abound in the southern half of the orb we travel on. Are they heavy? Do they prefer warmer climes? Can you name one? Can you visualize one? The Rhea is one. Can you picture it now? Can you name more?
So cruising the interweb thingy and I nearly fulminate over the thought of eating a ratite. Well at least if they are marketed that way. Why don’t you see rapeseed oil on the shelves of you local super-foody shop? Cuz’in you ainna gonna buy it iff’a it’s called dat! Red meat is now on the "wing" into innovative restaurants and some meat markets. The latest in meat products is from the "ratite" family of flightless birds. It's lean and tastes like beef, but contains much less fat. In fact, ratite meat is even lower in calories than chicken and turkey. Ratites have been around for 80 million years.
Gawd, who cares how long the damn meat has been around after a few weeks of aging! But really! 80 million years? I don’t even know a good vegan who would eat anything that old. Not even an old growth Sitka spruce.
The Australian Journal of Experimental Agriculture states, “Ratite meat is usually sold as fresh meat (steaks), with trimmings being processed into products such as burger patties and sausages. Most of the steaks are vacuum packed and exported. With the outbreak of Avian influenza, all fresh meat exports were halted from South Africa. However, if the meat has been exposed to an internal core temperature of 70°C, it may then be exported under the Meat Products Directive (EEC 2004) because it is assumed safe for human consumption; this placed urgency in developing value-added meat products. These products are sold as vacuum packed and cooked ostrich steaks. Salt infusion is frequently used to improve water retention of these sous vide products. Other products that have been developed are functional foods, such as emu snack sticks (higher creatine (C4H9N3O2) levels) for athletes. The quality and composition of other more traditional meat products such as sausages, patties, salami and pâté have also been determined and are discussed. A strong emphasis has been to develop products that will enhance the healthy perception of ratite meat amongst consumers. These include the development of low-salt bacon, hams with lower levels of phosphates and polonies (bologna) with olive oil replacing pork fat. The quality attributes of these products are also discussed as are future trends in the processing trade.”
